Just something to have on hand just in case someone wants something with their pastry. That is not the case at Whisk &amp; Arrow. The coffee team of Alec, Christopher, Tavia, and Lily put just as much thought and effort into the coffee lineup as the bakery team puts into the baked goods. Every single syrup or sauce they offer is made in house, from scratch, by the team.</image:title>

      <image:title>Long Format - Whisk &amp; Arrow - A perfect example of the difference this makes is their Hazelnut Praline Cold Brew. Every shop offers a hazelnut syrup, but very few make that syrup themselves. At Whisk &amp; Arrow they roast actual hazelnuts, candy them, then grind them down and use that in the sauce. This sauce is mixed with their cold brew and then topped with a lovely cold foam. You can really taste the difference between this and a mass produced syrup. It actually tastes like hazelnuts, not hazelnut syrup.</image:title>

      <image:title>Long Format - Whisk &amp; Arrow - Another popular drink I tried was not even a coffee drink (crazy, I know), but it was handcrafted and delicious. The Strawberry Mint lemonade is made with muddled mint leaves, macerated strawberries, and a house made lemonade. If you’ve been paying attention, you might recall that I am no fan of mint, but once again, hats off to fresh ingredients and well thought out flavors. This lemonade is fresh, slightly sweet, and tart like a lemonade should be. The tartness from the house made lemonade, sweetness from the macerated strawberries, and the coolness of the mint were all really well balanced and worked to create a depth I’m not used to in a lemonade.</image:title>

      <image:title>Long Format - Whisk &amp; Arrow - Okay, now back to coffee, but don’t put that lemonade away quite yet. The Mazagran is next up. This drink has been around since the 1800s, but isn’t often found on menus in the Midwest. I first had a version of this drink many years ago in a meeting, at a coffee shop, and it was made by Alec. The same Alec that has now brought it to the menu at Whisk &amp; Arrow. The Mazagran is an Espresso Lemonade and it’s delicious. If this combination is throwing you off, just think of it as a stronger version of an Arnold Palmer (black tea lemonade). I love this drink and I strongly encourage you to give it a try this Summer. When ordering, you can choose from a curated list of syrups to add. I had the mint (again?!) based on Alec’s recommendation. You can even get it as a decaf, which both Alec and Christopher said is even better than with the regular espresso, perfect for a hot afternoon.</image:title>

      <image:caption>Just like their original Green Bay location, they serve Coffee Wizardz coffee. They have even added in tap lines to serve their famous Nitro Draft Lattes and Cold Brew. There isn’t any baking done here on this premise, but you can get a wide variety of fresh baked breads and pastries just like you do at the bakehouse. They opened this location in December and so far they have had several different Espresso Tonics featured on their seasonal menus. I’m personally really hoping that trend continues as it is my favorite drink. They are open Tuesday-Saturday from 8am-2pm.       <image:caption>Known primarily as one of the area’s premier bakeries, Whisk also offers a top tier coffee program as well. They feature a extensive menu of classic coffeehouse drinks as well as a rotating selection of other creative choices. My favorite is the Mazagran which is an espresso lemonade. What really sets them apart from many area shops is the fact that all of their syrups are made in house using actual ingredients, such as actual hazelnuts to make their hazelnut syrup. I wrote a feature about a few of their Summer seasonal drinks in 2022. You can read that here. I have also used their Chai and Cold Brew Concentrates in making drinks featured in Appleton Magazine. They serve JUST Coffee Coop our of Madison for all of their drinks.</image:caption>

There is a small menu of coffee drinks as this is primarily a bakehouse, but they do offer up some seasonal selections as well. Coffee Wizardz got their start doing Pop Ups in the Milwaukee area serving creative coffee drinks and mocktails. They ran a successful Kickstarter campaign to purchase a roaster so that they could have further control over the beverages they were creating. They now roast in Green Bay and offer their coffee beans online, at Voyageurs, and at GB area farmers markets. Check out my Facebook Post for more details.       <image:caption>Elsewhere opened up the coffee shop portion of this beautiful space in March of 2022 and from what I saw on my visit, it has already become a favorite of UWO students and young professionals. They serve Partners Coffee out of New York state and offer a classic coffee shop menu of espresso drinks, brewed coffees, and other milk based drinks such as Chai and Hot Chocolate. Along with the classics, they also offer a few signature items such as a Spiced Lavender Mocha or a Thai Iced Coffee. The shop is roomy and modern yet very comfortable. It is a joint space with the market portion of the business that sells curated home goods of all sorts. Be sure to check it out when you go get your coffee. The coffee shop is open Mon-Sat 8am-3pm.       <image:caption>The Chemex is a favorite among coffee professionals everywhere. Not only is it a beautiful piece, but it also makes fantastic coffee. The secret lies with its filters, which are thicker than most. I like a an odd ratio of 1:16.6666666. I use 42 grams of coffee ground on the coarse side of Medium (20 on the Baratza Encore). My first pour, for the Bloom phase, is around 75-80 and I let that bloom for 45 seconds or so. My second pour starts with spirals around the entire bed. I pour aggressively up to 450g. I let that drain about half way. My final pour starts around the edges, slowly knocking down the coffee on the sides, I slowly continue in a spiral pattern until I reach 700g.</image:caption>

      <image:title>Recipes &amp; Tips - Aeropress</image:title>
      <image:caption>One of the best features of the Aeropress is its versatility. You can grind fine, coarse, weigh, not weigh, inverted, regular, whatever you want, you can make it work. I experiment quite a bit, but my standard recipe is 15g coffee and 250g water. Grind 15g quite fine (12 on the Baratza Encore). Prewet your filter paper, attach to the brewing chamber, and set it on top of your mug or carafe. Add your coffee. Pour your water slowly up to 250g. Give is a few stirs and let it brew for 1 minute. A little coffee will drain out, but don’t worry about. At 1 minute, place your plunger on and begin to press firmly, but slowly. Shoot for about 30 seconds or so. Remove the press, give your coffee a stir and enjoy.</image:caption>

      <image:title>Recipes &amp; Tips - Pour Over</image:title>
      <image:caption>Pour Overs are a great option to have on hand for single cups of coffee. They come in a variety of different shapes and sizes so you can find one that works for you. I like to keep my ratio around 1:15 when I make pour overs. This is a good ratio to start with if you like to add cream to your coffee. Depending on the coffee I’m brewing and the taste I’m going for, I will sometimes add a little extra water to the final brew to get it where I like it. For a small 10oz cup, I use 20g of coffee ground on the fine side of Medium (14 on my Baratza Encore). My first “bloom’ pour is around 40-50g and I let that sit for about 30 seconds. I next pour up to 200 in slow and steady circles covering any dark spots that appear. Let that drain for about 30 seconds. I pour my final pour up to 300 very slowly while covering the entire bed. Let it drain to dry. I brew right into my mug and give it a stir. Brewing into a carafe is a nice touch that helps aerate the coffee, but it is not necessary.</image:caption>
